Baked Crostini with Mozzarella and Tomato

1 loaf semolina or French bread
1/2cup olive oil
1 large tomato, chopped
3 tablespoons fresh basil, chopped
1/2 teaspoon salt
1/2 teaspoon black pepper
12 ounces Mozzarella cheese, sliced
Preheat oven to 375 degrees.
Slice bread into 12 (1/2 inch) pieces.
Place bread on an ungreased cookie sheet.
Brush 1 teaspoon olive oil over each bread slice, reserving 1/4 cup olive oil for later use.
Mix tomato, basil, salt, pepper and remaining olive oil.
Spread half the tomato mixture over bread slices and top each with a cheese slice.
Spread remaining tomato mixture over cheese.
Bake about 8 minutes, until bread is hot and cheese is melted.
Serves 12.
